Because of the small size, 7 to 8mm, these tiny capers have good eye appeal. They are green/gray in color. The caper is the flower bud of a low growing vine found in mediterreanean countries. Roland Capers are used widely by Mediterranean chefs. Capers are now also being used in "American" dishes: meat loaf and tuna salad. Tiny capers are larger than the nonpareilles and have a drained weight of 2oz. Roland Capers are used right out of the jar, for both hot and cold dishes.
